Homage to Pierre Troupel
This cuvée and its label pay homage to the grandfather of the owner, Sophie Kessler-Matière, who had piercing blue eyes and was an affineur of Bleu d’Auvergne cheese in the Cantal region. Today we offer gîtes and family catering at Chez Mimi – Raulhac

Grape varieties & blending
- 33% Grenache: from our plot in the Charbonnières locality.
- 33% Clairette : young Clairette from our plot located in the Charbonnières lieux dits
- 34% Bourboulenc : from our plot in the Palintan lieu-dit
Vinification & maturation
The grapes are harvested in mid-September, when they are picked by hand and placed into crates before being vinified in the cellars located on the estate in the heart of the village of Châteauneuf-du-Pape. Complete destemming, fermentation in vats, barriques and demi-muids at 15°C, then aged on fine lees for 3 to 4 months.
Food & wine pairing
Enjoy with poultry: blanquette of veal, chicken with tarragon or grilled fish. Vegetarian recipe: asparagus risotto or tian provençal. As for the cheeses, delicious with pressed cooked cheeses such as Cantal, Comté, Abondance or Saint Nectaire.
