terroir & viticulture

We grow this wine on 3 terroirs/lieux dits The terroir to the south of the appellation, on the rolled pebbles of the “Serres”, is where the old Grenache grapes thrive. To the north are the “Charbonnières” on clayey sand. To the west on sandstone soils for a very Châteauneuf typicity!

YIELD

Small yields /30 to 35 hl/ha

GRAPE VARIETIES & BLENDING

  • 34 % Grenache: vieilles vignes – Les Grandes Serres.
  • 33% Mourvèdre: Les Grandes Serres.
  • 33% Syrah: beaux tannins fins et une grande richesse aromatique – Cansaud.

Vinification & MATURATION

The grapes are harvested at the beginning of September, when they are picked by hand and placed into crates. The grapes are then vinified in the cellars on the estate in the heart of the village of Châteauneuf-du-Pape. Complete destemming, fermentation in vats, barriques and demi-muids at 15°C, then aged on fine lees for 3 to 4 months.
