Homage to Pierre Troupel
This cuvée and its label pay homage to the grandfather of the owner, Sophie Kessler-Matière, who had piercing blue eyes and was an affineur of Bleu d’Auvergne cheese in the Cantal region. Today we offer gîtes and family catering at Chez Mimi – Raulhac

Small yields /30 to 35 hl/ha
GRAPE VARIETIES & BLENDING
- 50% Syrah : from our plots in the Les Charbonnières and Cansaudlieux-dits
- 50% Grenache : from our plots in the Les Charbonnières lieux-dits
Vinification & MATURATION
The grapes are harvested in mid-September, when they are picked by hand and placed into crates before being vinified in the cellars located on the estate in the heart of the village of Châteauneuf-du-Pape. Total destemming, fermentation takes place at 25ºC. Traditional maturation in stainless steel tanks.
Food & wine pairing
Enjoy with grilled red meat or duck. Also works well with vegetarian recipes such as sweet potato curry or aubergine lasagne. Can also be paired with washed rind cheeses such as Munster, Maroilles and Livarot.
