We grow this wine on 3 terroirs/lieux ditsThe terroir to the south of the appellation, on the rolled pebbles of the “Serres”, is where the old Grenache grapes thrive.To the north are the “Charbonnières” on clayey sand.To the west on sandstone soils for a very Châteauneuf typicity! Small yields /30 to 35 hl/ha
GRAPE VARIETIES & BLENDING
- 75% Roussanne: Vieilles Roussanne, from our plot located at the Les Charbonnières lieux dits, brings floral aromas, complexity, silkiness and considerable smoothness.
- 25% Clairette: from the Les Charbonnières lieux dits, brings finesse and aromatic expression.
Vinification & MATURATION
The grapes are harvested at the beginning of September, when they are picked by hand and placed into crates. The grapes are then vinified in the cellars on the estate in the heart of the village of Châteauneuf-du-Pape. Complete destemming, fermentation in vats, barriques and demi-muids at 15°C, then aged on fine lees for 3 to 4 months.
Food & wine pairing
Enjoy with fish tartars (tuna, salmon), ravioli or risotto, or with goat’s cheese, comté, Abondance, tomme aux fleurs. This wine is the ideal companion for grilled fish or poultry.
