INGREDIENTS
Sea bass fillets (approx. 150g per person)
Limes
Fresh thyme sprigs
Extra virgin olive oil
Salt and black pepper
Step-by-step recipe:
- Preheat your grill to a medium heat.
- Season the sea bass fillets with salt, freshly ground black pepper and a drizzle of olive oil.
- Cut the limes into thin slices.
- Place a few slices of lime and a few sprigs of fresh thyme on each fillet of sea bass.
- Place the sea bass fillets on the hot grill and sear for about 3 to 4 minutes on each side, until they are golden brown on the outside and the flesh is opaque and tender on the inside.
- Remove the sea bass fillets from the grill and arrange them on a warm serving platter.
- Lightly baste the sea bass fillets with the juice from the grilled limes and a drizzle of additional olive oil.
- Serve immediately and enjoy with a glass of Châteauneuf-du-Pape Pierre Troupel red. Aerate the wine in advance to a temperature of 15°C to fully appreciate its aromas of red berries and its spicy character, which is perfectly matched to the freshness of the grilled fish.
