INGREDIENTS

Sea bass fillets (approx. 150g per person)
Limes
Fresh thyme sprigs
Extra virgin olive oil
Salt and black pepper

Step-by-step recipe:

  1. Preheat your grill to a medium heat.
  2. Season the sea bass fillets with salt, freshly ground black pepper and a drizzle of olive oil.
  3. Cut the limes into thin slices.
  4. Place a few slices of lime and a few sprigs of fresh thyme on each fillet of sea bass.
  5. Place the sea bass fillets on the hot grill and sear for about 3 to 4 minutes on each side, until they are golden brown on the outside and the flesh is opaque and tender on the inside.
  6. Remove the sea bass fillets from the grill and arrange them on a warm serving platter.
  7. Lightly baste the sea bass fillets with the juice from the grilled limes and a drizzle of additional olive oil.
  8. Serve immediately and enjoy with a glass of Châteauneuf-du-Pape Pierre Troupel red. Aerate the wine in advance to a temperature of 15°C to fully appreciate its aromas of red berries and its spicy character, which is perfectly matched to the freshness of the grilled fish.
