Grilled prawns with lemon an herbs

INGREDIENTS

500g peeled prawns
2 lemons
2 tablespoons olive oil
2 cloves garlic, chopped
Fresh herbs (parsley, coriander, thyme)
Salt and pepper (to taste)
Homemade or store-bought pesto

Step-by-step recipe:

1. Preheat your grill to a medium-high heat.

2. In a bowl, mix the olive oil, lemon juice, minced garlic, chopped fresh herbs, salt and pepper.

3. Add the peeled prawns to the mixture and make sure they are well coated.

4. Leave the prawns to marinate in the fridge for about 15 minutes.

5. Thread the prawns onto skewers, alternating with lemon slices.

6. Place the prawn skewers on the preheated grill and cook for 2-3 minutes on each side, until they are nicely grilled and pink.

7. Serve hot with fresh lemon wedges and garnished with a dollop of pesto on the side for added flavour.
