Cherry tomato salad
INGREDIENTS
• 250g cherry tomatoes, washed and halved
• 100g rocket (arugula), washed and drained
• 50g Parmesan cheese, cut into shavings
• 50g flaked almonds, lightly toasted
• 2 tablespoons extra-virgin olive oil
• 1 tablespoon balsamic vinegar
• Salt and freshly ground black pepper
Step-by-step recipe:
1. In a large bowl, mix the halved cherry tomatoes with the washed and drained arugula.
2. Sprinkle the Parmesan shavings on top of the salad.
3. Lightly toast the flaked almonds in a frying pan over a medium heat until they are golden brown and fragrant. Leave to cool.
4. Add the toasted almonds to the salad.
5. In a small bowl, mix together the extra-virgin olive oil and balsamic vinegar to make a vinaigrette dressing. Season to taste with salt and pepper.
6. Pour the dressing over the salad and toss gently to coat all the ingredients.
7. Serve immediately and enjoy this delicious, fresh and crunchy salad!
