Salmon Ceviche with avocado, spring onion ans lemon

INGREDIENTS

• 400g fresh salmon, finely diced
• 2 ripe avocados, diced
• 1 red onion, thinly sliced
• 2 chives, finely chopped
• 1/4 cup fresh coriander, chopped
• Juice of 4 limes
• Salt and freshly ground black pepper, to taste
• Lime slices for decoration
• Avocado quarters for decoration

  1. In a large bowl, toss the diced salmon together with the lime juice. Marinate in the fridge for 20-30 minutes.
  2. Meanwhile, prepare the other ingredients. Dice the avocados, thinly slice the red onion, and finely chop the spring onion and coriander.
  3. After marinating, add the diced avocado, red onion, spring onion and coriander to the marinated salmon. Season with salt and pepper, then toss gently.
  4. Place the ceviche on white plates, garnishing each plate with lime slices and avocado wedges.
    Serve immediately and enjoy!
