Salmon Ceviche with avocado, spring onion ans lemon

INGREDIENTS
• 400g fresh salmon, finely diced
• 2 ripe avocados, diced
• 1 red onion, thinly sliced
• 2 chives, finely chopped
• 1/4 cup fresh coriander, chopped
• Juice of 4 limes
• Salt and freshly ground black pepper, to taste
• Lime slices for decoration
• Avocado quarters for decoration
- In a large bowl, toss the diced salmon together with the lime juice. Marinate in the fridge for 20-30 minutes.
- Meanwhile, prepare the other ingredients. Dice the avocados, thinly slice the red onion, and finely chop the spring onion and coriander.
- After marinating, add the diced avocado, red onion, spring onion and coriander to the marinated salmon. Season with salt and pepper, then toss gently.
- Place the ceviche on white plates, garnishing each plate with lime slices and avocado wedges.
Serve immediately and enjoy!
